How to prepare Epiti ‘steamed corn and plantain’

Ingredients

  1. 3 cups fresh corn kernels or dry one, soaked for a day or two
  2. 2 big fingers of ripe plantain (peeled)
  3. 1 large onion
  4. 1/4 cup crayfish
  5. Fresh peppers (to taste)
  6. to taste Salt
  7. 2 seasoning cubes
  8. 1/4 cup vegetable oil

Steps

  1. Blend the corn with the pepper, plantain, half the onions and crayfish  
  2. Mix in the other half of the onion (diced), salt, seasoning cubes and vegetable oil.  
  3. Add warm water until desired consistency is achieved.  
  4. Divide the corn mixture into little nylons or tin or plates.  
  5. Steam for 40 mins and cool for another 10 mins before enjoying your yummy epiti.
